Have you ever tried roasting root vegetables in the oven? They are delicious--the sugars caramalize. I do it with carrots, turnips, and beets. Then I keep them in the fridge all week and slice them into salads.

Yes, I roasted root vegetables for thanksgiving last year with miso. it was great. Only thing missing was phoebe (from the guests, not the dish!)
