Happy Equinox!
For the next six months, we will beat you Lower 48ers for daylight hours!

Happy Equinox to you too! As for the state of your cookies, I can only think that a quicker-cooking cookie would be key. Less time for the chocolate to melt and sink. So I guess that means smaller mass, less flour (so that it's less dense), perhaps even hotter oven?
I wonder if aging the dough in the fridge for 12+ hrs would help - let the flour hydrate, sugar melt, get everything nice and cold like pie crust dough. Then into the oven fast before the dough comes back up to room temp.
hmmm, all I can say is that more experimentation is needed.

I had always heard about the evening sun. In Tok a couple of years ago I went out at 11:30 at night and experienced it. Amazing !
