Veggies for the week
Would you look at that? It's an eggplant. I am so impressed with Farmer Mike I cannot even tell you.
And Rena, thanks for the book recommendation! I just finished it last night. :)

Oh! Disappearing spoon? Wohoo! It's a good-un. So whatcha going to do with that precious eggplant? I don't suppose Rosie Creek grows escarole, does it? It's my new fav veg - related to chicory/radicchio, it's like a thick juicy meaty green lettuce, slightly bitter. I melt some chopped onions and anchovies in a low slow pan and braise the chopped escarole until tender.

All the vegetables have a healthy look, especially the eggplant.
Yes, yes! Twice last year I got escaroles and thought that they were some kind of lettuce! They were quite bitter, for lettuce. :)
