Swans!

In other news, I saw (and killed) my first mosquito of the season today. BOOOO! Mosquitoes suck. Haha! I made a pun! I didn't plan that, honest!

Cool! I haven't seen white swans in a decade now. The ones we have down here are black with a red bill --and they look cool too. I remember in '98 I saw a pair in the swamps in Goldstream Valley at the base of the back side of Ballaine Hill (just as you come down the hill and the road turns to the left right before the bridge crossing) while working (truck driving). WP was visiting so as soon as I got home I bundled her into the car (no reason given, just grab your camera) so she could take loads of shots. She'd never seen a white swan before (outside of the telly) so that pretty much made her day :)

OT I've just made a pound of feta cheese! It's great!

Don't have goats, but if you add lipase to the milk after the starter but before the rennet you get the same flavour. Nice little trick, eh?

I did make ricotta with fresh goat's milk when I was back in Fairbanks. Some friends up off of Gold Mine Trail raised goats so I had a good supply.
